BBQ Scallops with Coconut Chilli Sauce
12 Scallops in shell
1/2 cup coconut cream
3 tbsp. sweet chilli sauce
1 1/2 tsp fish sauce
a squeeze of fresh lime juice
1 fresh chilli finely sliced
a handful of fresh coriander leaves
Preheat your BBQ to a high heat.
In a small mixing bowl add the coconut cream, sweet chilli sauce, fish sauce and lime juice and mix until everything is thoroughly combined.
Tear off a large sheet of aluminium foil and lightly crinkle it before placing it over the grill plate of your bbq, this will holds the scallops in place while they cook.
Evenly divide the coconut cream between the scallops before placing onto the aluminium foil on the bbq and cook with the lid closed for 5-7 minutes or until the scallops are just cooked. If you don’t have a lid on your bbq you can still create this recipe, you may just have to adjust the cooking time.
