Get up and go… Green Coconut Smoothie

This smoothie is suited to the cooler months as it has a little body to it. It’s a luscious, delicious velvety green breakfast treat with a subtle caramel like flavour from the fresh date / maple syrup. I find it quite soothing and slightly sweet for a good get up and go in the morning. It has all the greens you need to start the day off the right way, while giving you a vitamin & antioxidant kick at the same time.

 Don’t be afraid to add the avocado and coconut oil as this is what gives the drink the smoothness and adds essential good fats for the immune and nervous system. Yoghurt is also full of good bacteria for the gut and calcium.

Serves 2 to 4 depending on your serving size

Ingredients:

2 ripe bananas, peeled
2 handfuls of baby kale (if using more mature kale, strip the leaves from the stalks and shred) or use spinach
1\2 large ripe avocado
2 tablespoon LSA powder [ equal mix of linseed and almonds and sunflower seeds ground to a fine powder]
350 ml pure coconut water
3 1\2 heaped tablespoons plain yoghurt
1 tablespoon honey or maple syrup to taste
3 teaspoons virgin coconut oil
2 fresh dates pitted and chopped
6 ice cubes
whole nutmeg grated, to taste fresh is best or 1\4 teaspoon ground

Method:
Add the chopped banana, kale or spinach, chopped dates, avocado, coconut water, yoghurt, maple, virgin coconut oil, LSA powder and ice cubes to a blender or the bowl of a high speed blender and blitz until smooth. Grate in fresh nutmeg to taste, blend again and serve.

Garnish with toasted shredded coconut on the top.
