Pineapple Three Ways
Pineapple is one of the most delicious fruits we have here in Australia and lucky for us it’s in season now, which means you can get it in abundance. We’ve put together three easy recipes for you to try and enjoy at home.
Easy Pineapple Cake
The perfect afternoon treat – best enjoyed with a cup of tea. All you need is 2 cups of sifted self-raising flour, 1 cup of caster sugar, 400g of crushed pineapple (undrained) and 100ml of pineapple juice. Mix until combined and then pour into a loaf tin. If you like, you can add some coconut butter cream icing or serve warm with ice cream.
Pina Colada
An oldie but a goodie, a refreshing Pina Colada is the perfect way to feel like you’re on holidays without leaving your home. Cut up 6 chunks of pineapple and pop it in your blender, then add 1 teaspoon of sugar, 1 tablespoon of coconut cream, 50ml white rum, 50ml fresh pineapple juice and around 6 ice blocks. Blend it all up, serve in a cocktail glass of your choice and wack a pineapple wedge on the side of the glass for the final touch. Cheers!
Pineapple Jam
This pineapple jam recipe is delicious spread on toast or with scones and jam. It uses only four ingredients; 1 pineapple, 1 cup of water, 2 cups of sugar and the juice of a lime (or two). Peel the pineapple and put the pulp to the side. Then, heat a pan, adding the pineapple pulp and water. Cook for 20 minuets on medium and stir frequently. Once the pineapple pulp becomes soft, add the sugar and lime juice. Stir to combine and then let the mixture cook for half an hour. Once nice and thick, spoon the jam into a jar and store it in the fridge for approx. 3 months.
