Pine mushrooms (also called saffron milk caps) are a beautiful, meaty mushroom that are only around for a short time during autumn. They pair beautifully with pasta and a buttery sauce with fresh herbs and garlic, and are as equally delicious served the same way, on toast. You will find Melbourne restaurants putting on a lot of lovely pine mushroom dishes when the time comes, because they are such a rare ingredient and those that love pines, will chase down any dish to savour them!
