The milk, together with the traditional make and long maturation, ensure richness & complexity, giving great depth of flavour with a long aftertaste. Ready to eat, though mild, at around 3 weeks - will be unforgettable after 6 weeks of age, when golden flora may appear to influence bouquet and flavour.
