Getting to Know Carl from The Bratwurst Shop

Carl Greco is the owner of The Bratwurst Shop & Co  and has been at the Market since he was just eleven years old.

It all began when Carl’s parents purchased a poultry store in the Dairy Hall in 1979, and then The Bratwurst Shop in the 90’s.

Carl took over the shop when he turned 21 and since then he hasn’t looked back, also opening a restaurant and café in Melbourne, becoming the owner and manager of a smallgoods factory that produces his delicious bratwurst sausages, and founding a new eatery at the Market, Ladle & Tong – just next door!

Back in 2000, a local Continental butcher in Kew produced Carl’s bratwurst sausages but this butcher unfortunately closed its doors. This forced Carl to rethink the quality of his bratwursts and how important it was to find the right supplier. Then in 2004, Carl seized an opportunity to purchase a share in a small business called Barkly Smokehouse that produced eastern European smallgoods. Carl’s dream was fulfilled as he had always wanted to have full quality control of the production and distribution of his bratwursts. Carl then commenced production of sausages specifically for The Bratwurst Shop.

Barkly Smokehouse pride themselves on being an old-fashioned smallgoods company that proudly combine the traditions of Europe with the freshness of Australia. Over time, Barkly Smokehouse has evolved into a company producing some of the finest smoked smallgoods in Australia, supplying over 300 establishments in Melbourne, Sydney and country Victoria. Their products have won many awards including recently Gold, four Silver and four Bronze at the Australian Food Awards for the following products:

  • Short cut bacon
  • Kabana
  • Mediterranean lamb
  • Wedding sausage

Carl says that being able to manage his products from production in the factory to selling them at the shop means that he has complete control in ensuring a quality product for his customers, which is something he says is extremely important. Having grown up in the Market, Carl has seen generations of customers come through the Market, and it’s the diversity of these customers that makes the Market so special.
